Fresh Chicken Pad Thai!🎏
I just made this one for my husband, who doesn’t normally like Thai food, and he LOVED it!! A quick, healthier alternative to Thai take-out! The best part is the noodles are made from a plant fiber and are gluten-free, 0g sugar and a low carbohydrate substitution to pasta! 🙌

🔸1 Package @Questnutrition Spaghetti Noodles🍜
🔸1 Boneless, Skinless Chicken Breast, cut into small chunks
🔸2 Eggs
🔸2 Tbs Raw, Unsalted Peanuts (optional)
🔸1-2 Scallions, chopped
🔸1-2 Small Chili Pepper, chopped
🔸1/2c Cabbage, thinly sliced
🔸1 large handful Cilantro, chopped

Mix the following in a bowl & set aside:
🔸1 Tbs Rice Vinegar
🔸1 Tbs Fish Sauce
🔸2 Tbs Fresh Lime, squeezed
🔸1 Tbs Avocado or other oil
🔸1 Tbs Water
🔸1 Tbs Coconut Sugar
🔸1 Garlic Clove, minced
🔸1-2 tsp Thai Seasoning

In a sauté pan over medium heat:
1⃣1/2 Tbs oil to coat pan
2⃣Drop chicken and begin to cook
3⃣Add scallions, chilies, peanuts & cabbage
4⃣Mix and begin to brown, about 5min.
5⃣Add liquid mixture from bowl and stir
6⃣Add rinsed spaghetti noodles and mix
7⃣Add cilantro and stir for additional 1-2min.
8⃣Plate it and enjoy!

🌟Ginger is your nausea cure! It helps eliminate dizziness and vomiting from motion sickness, food poisoning or flu. It also is a great anti-inflammatory if you have joint or muscle pain.

Once you do that it’s amazing to see how your cravings change! Now it’s rare that I really crave sweets. Instead I eat lots of fresh fruit! It’s satisfying and gives me tons of nutrients!

Stick with it. When you get a craving for something bad, swap it for something good! It may feel forced at first but eventually you will teach your body what it really wants to snack on! Xoxo Katie 💕
